• Updates to main got accidentally removed/written over in the core-3 branch when merging main in

What changed?

• I have swept through the files changed in core-3 and used the diff's as reminders/guides to what needs to be incorporated/what got lost in the merge commits.
• Fixed the Expo quickstart to include theming/styling, use the new email-pass-sign-up/sign-in partials for the custom flow examples, use the <Show> component, and use the @clerk/expo import instead of @clerk/clerk-expo
• Updated Expo examples to use core-3 (to match the email/password custom flow from the core-3 branch)
• Reverted changes made to the upgrade guides (these should never be touched)
• Fixed callouts that included info about using certain expo package versions
