It's release time again 🦫!

We're currently on RC3 of the 2026.01 release (RIOT-OS/Release-Specs#332), with just a few tests left, which means we need to start discussing the release notes. Please let me know if you want to highlight something else that I missed from this cycle, or otherwise adapt the notes.
