Verify expected file paths

When attempting to run the experiment, data is not in the paths specified in the notebooks. If the data has moved, we should either update the path or enable users to specify paths via .env or the like.

I like the idea of a CLI with configurable paths (the CLI sits on top of a file that directly works with code execution, and the CLI is just a handy wrapper for the scripts / code).

In my mind, a .env with environment variables is distinctly different from, let's say, an experiment configuration where we need to point to data.

Maybe we need some way to manage experiments? Something lightweight?
