feat: Provide a new OpenAPI base class for streams

Description

#3190 introduced a way to retrieve the stream for a schema from an OpenAPI spec, but there's a few other things that could be derived from it:

• The authentication scheme. We could derive an auth object from this info.
• The list of available streams. This would be tricky but perhaps valuable.
