Super idea !
If I can find one volume pedal (from an electric piano or organ), I will try to implement a system to "accelerate", and "brake" (or slow down).
Instead of and 0 and 1 digital information, I will try and modify your code to start at zero if the pedal is at mid-position.
Send PgUp if the pedal is pressed by the foottip ("accelerate")
Send PgDn if the pedal is pressed by the heel ("brake")
A pedal with no spring which stays in the position you leave it, instead of a spring loaded sustain pedal as yours, returning to zero on its own.
