Feature: Add project-level colors.json setting to lock categorical colors (order-independent)

Please add a simple config so Huez can load a repo-level colors.json to keep category→color mapping fixed, even if I reorder data or bars. This should apply across seaborn/plotly/altair/plotnine/matplotlib.
