Create Data Structure Example for Learning Path/Example App

Update the cbl-ionic repo with scripts to quickly get Couchbase Server, Sync Gateway setup for the sample data set using Scopes and Collections that can be used in the learning path and for testing in the example app. This should also include scripts to quickly get Capella setup with sample data.
